  1. Heat oven to 450 degrees. In a small bowl, stir together the chili powder and 2 teaspoons kosher salt.
  2. On a large sheet pan toss the poblanos, onions, tomatoes, jalapenos and 1 tbsp of the chili powder and the oil. Mix well.
  3. Add the sugar and oregano to the remaining chili powder mixture. Season the chicken with salt and pepper and then rub the chicken with the chili mixture. Add the chicken to the sheet pan and arrange the garlic in the middle of the pan.
  4. Roast until the thighs reach 175 degrees and breast (if using) reaches 160 degrees. Remove chicken from the pan.
  5. Pour all the veg and any remaining oil and juices into a mixing bowl. Smash the veggies leaving them a little chunky. Stir in the vinegar and cilantro. Season with salt and pepper.
  6. Serve the chicken with the salsa. I like to serve this with rice or cauliflower rice with a side salad. Corn and black beans are also a good side with it.

Chipotle Chili

Chili, is there anything better on a cold winter night than a piping hot bowl of Chili?  I posted my age-old favorite Chili recipe a while ago.  That is my go to Chili recipe but when I saw this one in Bon Appetit’s Fast Easy Fresh, I knew I had to try it.  You see, I LOVE Chipotle Chilis.  Love, love, love them.  I like it hot.  The original recipe had you add 2 Chipotle peppers.  I started with 3 and ended up with 5 :).   I also added the tomato paste and brown sugar as it needed a little sweetness to balance the chilis.  Other than that, I was pretty true to the recipe.  When I served mine I added avocado, low-fat sour cream, a little cheddar cheese, raw red onion and a few big spoons of  hot sauce which Bill found a little perplexing.  I told you I like it hot!  🙂

Loaded Nachos

I know I have been posting all these yummy, can’t believe it’s healthy and good for you recipes!  Yeah!  It’s so fun to be healthy.  Yeah, it’s so fun to do everything in moderation and hell, when it’s the Divisional round and your team is playing at home and  your QB is Brady, I am not going to eat a salad.  I am going to work my ass off extra that day and I am going to eat some FOOTBALL food Dammit!

These nachos fit the bill.  If you don’t feel like playing with the spices I have on the recipe, skip them and just use a taco mix packet (no one is going to judge you!)  I just might make my famous Honey Hot wings too, last time I made wings and nachos for the game we won……….it’s only crazy if it doesn’t work, right? Chile Rellenos

Chile RellenosI love Chile Rellenos but I must say the deep fried meat stuffed ones you get at most Mexican restaurants is just too much.  Too rich and heavy.  I created this one with cheese instead of meat and I bake it with panko instead of frying it.  The sauce is a little spicy and smooth and the end result is a great appetizer or light dinner if you added a salad on the side.  The sauce freezes great, so feel free to make a double batch, put it in a labeled zip lock bag and freeze for another time.  The sauce would be great on grilled chicken or fish too 🙂 Continue reading Chile Rellenos

Have I told you how much I adore soups and stews?  Well, I do.  There is something so warm and welcoming about a hearty bowl of homemade soup.  Homemade soup is healthy and inexpensive to make.  Whenever I make a batch, I always double it and freeze the leftovers in individual containers to have on hand for a healthy delicious lunch.  If you are going to double this recipe, make sure you make it in 2 different pots.  I really found making this that if you double in a large pot, the flavors are never as intense as when you make a single batch in one pot.

If you like spice, add more chiles!  I will usually add 3 or so and then an hour into the cooking add a little more if it’s not too spicy. Continue reading Posole (Mexican Pork Stew)

These tacos are soooo good!  You can make them as spicy or as mild as you want depending on how much of the seeds you keep.  Sometimes, I will add some chiptole pepper to it as well.  I usually make it a little on the milder side for my family and then just put a lot of hot sauce on it.

They are great for game day.  If we are having Football party, I like to make these and have all the fixing’s laid out on the counter and then guests can just go make their own whenever they are hungry.  You need to keep things super casual on game day, can’t risk missing a big play!  Enjoy and Go Pats!!!!  Continue reading Slow Cooker Pork Adobada Tacos

Mexican Crockpot Chicken Quesadillas

You know those days you just don’t have time to make dinner?  Or those days when you don’t feel like cooking?  Or are you one of my friends that hates to cook?  Then people this is the recipe for you!  It tastes fantastic, is so easy it shouldn’t even count as “cooking”, it’s healthy and your house will smell fabulous all day.  I made it yesterday for Dinner and when Brian walked in the house he asked if we were having tacos for dinner.  You can use the mexican mixture a lot of different ways.  Last night Bill had it on rice, I had it as a soft taco on a tortilla and Brian had it on a hard taco shell.  Today, I made a quick-lunch for Bill and I using the leftover chicken mixture as a base for some fantastic quesadillas.  Looking at this photo now, I could have another.  Look at that melted cheese…..yummy!   Enjoy 🙂  Continue reading Mexican Crockpot Chicken Quesadillas
