Nothing quite says summer like Tomato Bruschetta. Tomatoes, garlic, olive oil and basil come together in a delicious snack. This is great as an appetizer or as a side dish with grilled meats. The trick is to make sure you marinate it for at least an hour, so that the tomatoes can be infused with all the herbs. Enjoy! Continue reading Tomato Bruschetta

Grilled Steaks with Blue Cheese & Chiles
Blue Cheese + Medium Rare Filet Mignon + Red Wine = Heaven? Yes, in this case it does. This blue cheese topping is fantastic. It’s super quick and easy to make and just takes a nice grilled steak to the next level. It’s also a great topping for burgers or crackers. Continue reading Grilled Steaks with Blue Cheese & Chiles
Zucchini Gratin
During grill season, it’s hard to come up with interesting side dishes. You start to get sick of pasta salad, potato salad, salad salad, etc. Who doesn’t love a gooey, cheesey dish? This is a great side and a fantastic way for you to get your kids to eat some veggies. Best thing is that you can make it ahead and then just throw it in the oven to finish. Continue reading Zucchini Gratin
Sweet Chili Asian Wings
Wings are a crowd pleaser. Whether you are throwing a cookout or a Football party, bring out a big batch of tasty wings and you will be left with any empty bowl, STAT. This recipe is one of my favorites, from Bon Appetit at Epicurious. They can be made ahead, so they are perfect for a party. You can make the glaze and marinate the wings ahead, then just cook them right before it’s time to serve. Sometimes when I am having a big party, I will make a huge batch and cook them in a disposable pan so that when they are done, I don’t even have a pan to clean up! BBQ Chicken 3 Ways
It’s summer and I don’t know about you, I always feel like a kid in the summer. I sit at my desk working, look outside the window and wish I was at the beach or the pool. We are lucky, we have a pool, so I try to finish my work early and make simple dinners so that we can maximize the pool time as soon as the work day is over. I love making dishes that do double and triple duty so I can lounge on my lounge chair instead of being stuck inside cooking dinner. Here’s a great way to get multiple meals (Dinner and next day Lunch, Dinner, next day Lunch and next day Dinner, etc.) out of one main recipe.
Day 1, make BBQ Chicken
Day 2, Make BBQ Chicken Salad for Lunch
Day 2, Make BBQ Chicken Quesadillas for Dinner

Spending nights eating outside on the pool deck and taking advantage of hot summer nights. Continue reading BBQ Chicken
Zucchini Succotash with Chicken & Pesto
Here is my newest favorite lunch obsession. I make a batch and eat it for lunch for a few days. It’s soooooooooooo yummy and also low calorie and healthy, but honestly do you care if it’s healthy if it doesn’t taste good? I sure as hell don’t!
