BBQ Chicken 3 Ways

It’s summer and I don’t know about you, I always feel like a kid in the summer.  I sit at my desk working, look outside the window and wish I was at the beach or the pool.  We are lucky, we have a pool, so I try to finish my work early and make simple dinners so that we can maximize the pool time as soon as the work day is over.  I love making dishes that do double and triple duty so I can lounge on my lounge chair instead of being stuck inside cooking dinner.  Here’s a great way to get multiple meals (Dinner and next day Lunch, Dinner, next day Lunch and next day Dinner, etc.) out of one main recipe.

Pistachio Pesto

I have mentioned many times how much I love pasta.  Pesto is just another excuse to eat pasta (not that I need to work hard to find an excuse to eat pasta!~).  Once you get the hang of making pesto, you can easily create your own recipe anytime.  The basic premise is herbs, a little garlic, some type of toasted nuts, olive oil and a little cheese.  I have also found that a tiny drizzle (I do mean tiny!) of very good sherry vinegar adds a nice touch. Southwest Chicken Salad

Southwest Chicken SaladI love salads.  This is one of my favorites and I make it a lot in the summer.  You can work with whatever you have on hand.  If I have left over corn on the cob in the summer, I will slice it off the cob and add it to salads.  I also like to have some black beans in as well.  You can add any vegetables you like, use up what’s in that produce drawer!

Banh Mi-Pork Meatball

banh miLast Friday the sandwich of the night was a Banh Mi Pork Meatball Sandwich.  Banh Mi is a Vietnamese street food staple.  It’s on a classic french baguette, with a creamy spicy siracha sauce, savory pork meatballs and a crunchy sweet & spicy slaw made with carrots and daikon radish.  All the flavors come together in a totally delicious sandwich!

Chicken Enchiladas

This recipe is an oldie but a goodie.  It is super easy to make and the sauce tastes really rich and creamy but it’s still light from just using low-fat cream cheese.   I will make this the day ahead when I know it will be a busy day and just pop it in the oven for a quick dinner.  Add a salad and you are good to go.  The leftovers are great too (if you have any) 🙂 Continue reading Chicken Enchiladas
