There is nothing like this homemade salsa. It’s better than what you can buy at the store and it literally takes less than 10 minutes to make. During grill season, I always have some in the fridge. It’s not just for chips (although, yes, chips/salsa/guacamole/margaritas are a fave combo!). Continue reading Homemade Salsa

Swiss Bacon Dip
**WARNING** This dip is addicting. Proceed with caution. You may swap out low-fat mayo and low-fat cream cheese if you like. Yummy! Continue reading Swiss Bacon Dip
Boursin Stuffed Mushrooms
The easiest appetizer you will every make. Boursin stuffed mushrooms. Tangy, creamy, garlicky cheese melted on a mushroom. Yummy! Continue reading Boursin Stuffed Mushrooms
Southwest Egg Rolls
I love these egg rolls and they are always a big hit. You can make them ahead of time and just pop them in the oven just when your guests arrive. Any kind of ground meat will do. I prefer these with pork but if you would prefer chicken or turkey, it’s still really good. Continue reading Southwest Egg Rolls
Tomato Bruschetta
Nothing quite says summer like Tomato Bruschetta. Tomatoes, garlic, olive oil and basil come together in a delicious snack. This is great as an appetizer or as a side dish with grilled meats. The trick is to make sure you marinate it for at least an hour, so that the tomatoes can be infused with all the herbs. Enjoy! Continue reading Tomato Bruschetta
Sweet Chili Asian Wings
Wings are a crowd pleaser. Whether you are throwing a cookout or a Football party, bring out a big batch of tasty wings and you will be left with any empty bowl, STAT. This recipe is one of my favorites, from Bon Appetit at Epicurious. They can be made ahead, so they are perfect for a party. You can make the glaze and marinate the wings ahead, then just cook them right before it’s time to serve. Sometimes when I am having a big party, I will make a huge batch and cook them in a disposable pan so that when they are done, I don’t even have a pan to clean up! Grilled Shrimp with Grilled Tomato Cocktail Sauce
This is one of my favorite summer go to recipes, from my all-time favorite Summer grilling cookbook, Boy Meets Grill. Have you ever fallen in love with a cookbook so much that the pages are all dirty, the binding breaks and you have sticky notes on every other page of all the recipes you just have to try? Well, this is that cookbook for me, no lie see below! Continue reading Grilled Shrimp with Grilled Tomato Cocktail Sauce
Jalapeno Poppers
These are the simplest, easiest, tastiest and pretty healthy snack! I got the recipe from The Pioneer Woman Cooks. I skinnied it up by subbing low-fat cream cheese for full fat and center cut bacon for regular (as well as just putting the bacon on top instead of wrapping all the way around). Now you can take the calories you saved and drink a Margarita with it! Continue reading Jalapeno Poppers
Salad with Soy Dressing & Prosciutto
This is Bill’s all time favorite salad. I made it for him when we first started dating. I used to make it all the time and then frankly, I forgot about it. When planning our Valentine’s menu, I was trying to think of a light salad to have and remembered this. Let’s say it was well received by my Valentine 🙂
The salty prosciutto and dressing goes really well with the lettuces. Make sure you lightly dress the salad, a little of this dressing goes a long way! Continue reading Salad with Soy Dressing & Prosciutto
Potstickers
These are crazy good. Make for a great appetizer or a light dinner if you serve with an asian inspired salad on the side. That’s all I have to say about that. 🙂 Continue reading Potstickers
