Who doesn’t love comforting, delicious mashed potatoes?  The problem is that too many recipes have you drown them in butter and cream to make them rich.  This recipe replaces the butter with low-fat cream cheese for richness and chicken broth replaces the cream.  End result are delicious healthy mashed potatoes that you can eat anytime.

The family will love it!  Believe me, Will and Brian are crazy about them and every time my Mom makes mashed, they ask her to put the cream cheese in it!  Mom, here’s the recipe 😉

Ingredients
  • 4 Large Yukon Gold Potatoes, peeled and chopped bite size
  • ½ cup low-fat cream cheese
  • ½ cup chicken broth
  • Salt & Pepper
  • Variation: Head of Roasted Garlic
Instructions
  1. Boil the potatoes in a pot until soft, about 30 minutes.
  2. Drain the potatoes and place back into the pot they were cooked in.
  3. Mash well, and then add the cream cheese and chicken broth. Salt & Pepper to taste. You may need a touch more cream cheese or broth depending on the size of the potatoes. If using the garlic, mash it into a paste and then mix into the mash.
