4 Large Yukon Gold Potatoes, peeled and chopped bite size
½ cup low-fat cream cheese
½ cup chicken broth
Salt & Pepper
Variation: Head of Roasted Garlic
Instructions
Boil the potatoes in a pot until soft, about 30 minutes.
Drain the potatoes and place back into the pot they were cooked in.
Mash well, and then add the cream cheese and chicken broth. Salt & Pepper to taste. You may need a touch more cream cheese or broth depending on the size of the potatoes. If using the garlic, mash it into a paste and then mix into the mash.
