Jalapeno Poppers

jalapeno poppersThese are the simplest, easiest, tastiest and pretty healthy snack!  I got the recipe from The Pioneer Woman Cooks.  I skinnied it up by subbing low-fat cream cheese for full fat and center cut bacon for regular (as well as just putting the bacon on top instead of wrapping all the way around).   Now you can take the calories you saved and drink a Margarita with it!

Ingredients
  • 12 Jalapenos
  • 6 Slices Center Cut Bacon
  • Low-Fat Cream Cheese
  • S&P
Instructions
  1. Preheat oven to 400
  2. Spray a cookie sheet
  3. Slice the jalapenos in half, remove the ribs and seeds and place on a cutting board (I use a melon baller, works great!)
  4. Fill the inside of the jalapeno with cream cheese.
  5. Salt & Pepper the jalapenos.
  6. Stack the bacon slices and cut into 4 pieces.
  7. Press a bacon slice on top of each jalapeno. Press it into the cream cheese so that it's secure. Can be made ahead and kept in the refrigerator, a day or 2 before cooking.
  8. Spray tin foil and cook in the oven for 20 minutes with the foil on (you don't want the bacon cooked before the chile is).
  9. Remove the foil and cook 5-10 more minutes until chile is done (the color will go from bright green to a more muted green).
  10. Serve with margaritas.
