Japanese Ginger Dressing Salad

- 1/ 2 Cup Chopped Onion
- ½ Cup Canola or Peanut Oil
- ⅓ Cup Rice Vinegar
- 2 Tbsp Fresh ginger chopped
- 2 Tbsp Celery chopped
- 2 Tbsp Ketchup
- 4 Tsp Soy Sauce
- 2 Tsp Sugar
- 1 Tsp garlic
- 2 Tsp lemon (optional)
- S&P
- Place all ingredients in a blender and blend for one minute. Makes about 1.5 cups. Can be stored chilled for up to 1 week.
- I like to serve with iceburg or romaine, shredded carrots, scallions & sliced mushrooms.
