OMG, this is my new favorite way to eat zucchini, it’s sooooooooooooo good and good for you too! Slice the zucchini the long way as thin as you can get it. Saute with onions and garlic, add tomato sauce and parmesan, I can’t explain how good this is, you need to make it tonight!
Zucchini "Spaghetti" with Tomato Sauce

Ingredients
- 2 Medium Zucchini, sliced like spaghetti
- ½ Medium onion, chopped
- 1 Tbsp olive oil
- ½ Tsp crushed red pepper (optional)
- 1 Cup Tomato Sauce
- Grated Parmesan for serving
Instructions
- Slice the zucchini like the picture in the post.
- Heat a non stick skillet to high and add the onion. Turn the heat to low and sweat the onion for 5 minutes.
- Add the garlic and crushed red pepper if using.
- Add the zucchini and season with S&P.
- Cook zucchini until it gets tender, 5-7 minutes.
- Add the tomato sauce and stir well.
- Serve with grated parmesan on top.
