I love pesto. Everyone is familiar with the standard basil/pine nut pesto but there are many, many others to try. This is one of my favorites. Wonderful bright taste from the cilantro and mint.
Mint Cilantro Pesto

Ingredients
- 1 bunch of cilantro
- 1 bunch of mint
- ¼ cup pecans
- 2 cloves of garlic
- ½ cup grated parmesan
- 1 tsp good sherry
- 1 cup extra virgin olive oil
Instructions
- To the food processor add the cilantro, mint, pecans, parmesan and sherry. Pulse a few times.
- Slowly add the olive oil until it is mixed well.
- Season with salt & pepper.
- Note: Depending on your taste, you may add more olive oil, pecans or parmesan cheese.
