A different twist on “Potato Salad” for your next cookout.  Warm Bacon dressing mixed with roasted smashed potatoes, yum!!

Smashed Potato Salad

Ingredients
  • 5 Pound bag of baby potatoes
  • 4 Slices of Bacon, chopped
  • ½ Large onion, chopped
  • 1 Tbsp chopped garlic
  • 2 Tbsp chopped flat parsley
  • 4 Tbsp Olive oil
  • 1½ Tbsp White Wine Vinegar
  • ½ tsp red pepper flakes (optional)
Instructions
  1. Heat oven to 375
  2. Put potatoes and 2 Tbsp Olive oil on sheet pan. Salt & Pepper to taste. Mix potatoes with the oil so they are lightly coated. Cook potatoes until cooked through about 35-40 minutes. Take out half way and turn potatoes over.
  3. Heat a non stick skillet and add the bacon. Cook until bacon starts to crisp.
  4. Add onion to pan and remaining 2 Tbsp olive oil. Season with S&P and red pepper flakes if using. Turn onions well and sweat until translucent. Add vinegar and stir well.
  5. Remove potatoes from oven and smash them lightly with a potato masher.
  6. Put potatoes into pan with onion & bacon mixture. Add parsley and stir well. Taste for seasoning.
  7. Can be served warm or at room temperature.
