Southwest Chicken Salad

Southwest Chicken SaladI love salads.  This is one of my favorites and I make it a lot in the summer.  You can work with whatever you have on hand.  If I have left over corn on the cob in the summer, I will slice it off the cob and add it to salads.  I also like to have some black beans in as well.  You can add any vegetables you like, use up what’s in that produce drawer!

Strawberry Spinach Salad with Poppy Seed Dressing

One of my all time favorite salads.  I make this as soon as I get spring fever and there are decent strawberries out.  It’s best in June when Wilson’s has their own strawberries out but it still tastes damn good in April when I am done with winter stews and looking for fresh spring tastes!

Japanese Ginger Dressing Salad

You know the delicious salad dressing you get on the salad at your local Japanese steak house?  This tastes just like it but you can make it at home.  There are quite a few ingredients and you can work with it.  For example, the lemon is a nice touch but not necessary.  This makes a big batch that will keep up to a week in the refridgerator.  It’s a nice twist on your normal salad.  I like to have this with Potstickers for a fun weeknight dinner. Winter Caprese Salad

I am a tomato fanatic.  I stalk the farms in the summer just waiting for the first round of local fresh tomatoes and once they arrive, I eat them every day, sometimes at every meal.  There is nothing so wonderful as a warm tomato with a little salt on it……..heaven.  Once September ends and the only tomatoes I can get are at the grocery store, it’s a little depressing.  Even if they are ripe and red they don’t taste anywhere near like the summer tomatoes.

This salad has you roast the tomatoes slowly and the roasting process makes those ho hum store bought winter tomatoes taste….wait for it………Good!  They may not rank with the summer ones, but they are close.  This is a great starter or side dish for a comforting winter meal. Balsamic Vinaigrette

 

Balsamic Vinaigrette

Ingredients
  • ¾ Cup Olive Oil
  • 2 Tbsp Dijon Mustard
  • ½ Cup Cider Vinegar
  • ¼ Cup Balsamic Vinegar
  • 2 Tsp Honey
  • 1 Tsp Chopped garlic
  • 1 Tbsp Chopped shallot
  • Salt & Pepper to Taste
Instructions
  1. In a mason jar, add the mustard, vinegars, honey, garlic & shallots and shake well.
  2. Add the olive oil, season with salt & pepper, shake well until dressing is all mixed.
  3. Can be stored in the refrigerator up to one month.

Spinach Bacon Salad

I love this salad.  The combination of the creamy eggs, the salty bacon and the tangy dressing is fantastic.  The best part is that it can be made ahead of time and just tossed together when  you are ready to serve.  The dressing can be stored in the refrigerator for up to 2 weeks, so feel free to double or triple the recipe and you will have a great homemade recipe to use.
