Butter Poached Lobster

Ingredients
  • 2 1.5 pound lobsters
  • 2 Sticks salted butter
  • Chopped chives
Instructions
  1. Fill a large stockpot with water 2 inches high and bring to a boil.
  2. Place the lobsters in the pot, cover and cook for 5 minutes.
  3. Remove lobsters and take the meat out of the tail and claws, trying to keep it all in one piece if possible.
  4. Meanwhile, melt the butter in a sauce pan. When the butter is almost melted, add the lobster pieces and simmer for 3 minutes. Turn all the lobster pieces over and simmer for 2 more minutes.
  5. Remove the lobster and serve with a drizzle of the butter. Sprinkle with chives.
