This is a great condiment for tacos, fajitas, burritos. Make it at least an hour before you want to serve it so all the flavors can meld together.
Pico De Gallo

- 4 Tomatoes, seed removed, fine chop
- ½ yellow onion, fine chop
- 1 jalapeno, finely minced (remove all seeds if you don't want heat, save a little if you like heat)
- Juice of 1 lime
- 2 Tbsp cilantro (optional)
- Place all ingredients in a bowl. Season with kosher salt and pepper, mix well.
